Last night I finished my first 4k run! It wasn’t too bad, I wanted to die a little bit at the beginning, but once I got into a good stride everything was smooth sailing. What sucked about it was a) my headphones completely broke on lap 5 (of 20), and b) I almost puked after. But those are minor details.
I’m hoping I can recover faster from the first few laps tonight.
Food yesterday was toast for breakfast, carrots for morning snack, tofu and tzatziki and carrots for lunch, a Larabar for snack, and shrimp with broccoli and mushrooms for dinner.
Ok, so yesterday I definitely did not eat clean; I have to do a drawing of my favourite food for one of my classes, and so I had to make cupcakes! Obviously.
And I did end up eating one .. or three. :)
Anyways, another thing I’m finding difficult about the challenge is getting all of my meals in on weekends. I usually end up sleeping in past breakfast and sometimes my morning snack, and since I’m just bumming around the house most of the time, I don’t get hungry. Ever. So I guess it’s alright if I’m not hungry, right? As long as I still eat clean!
Today for “breakfast” (really at noon) I had toast with almond butter, and then lunch (at afternoon snack time) was pasta with mushrooms in tomato sauce, and a little bit of goat cheese sprinkled on top. Can I just say that melted goat cheese makes absolutely everything better?!
This past week was pretty hectic with projects (as always), so I’m glad to have a little rest today.
I didn’t end up running Wednesday night since I still felt like shit, but got my butt in gear Thursday afternoon and did my required 2k (faster than Monday’s too!).
Thursday food included: a plain omelette for breakfast plus carrots and cucumber for morning snack, a chicken caesar salad for lunch, almonds for afternoon snack and an egg salad wrap for dinner.
Yesterday I had an egg for breakfast, no morning snack, a turkey sandwich for lunch, no afternoon snack, and tofu, sweet potato and an egg frittata for dinner. Art class really can screw me up on Fridays, since I’m there from 9am to 3pm (Yes, for ONE class). And because of the lack of buses in my neighbourhood, I have to leave my house an hour before class. Couple that with staying up past 12 the night before working on the project due for my morning class (because I have another 5 hour class that goes until 10pm Thursday evenings), I really don’t feel like making food in the morning. Hopefully I’ll get better at this as the challenge progresses!
I also didn’t go for a run since the track was closed for my school’s convocation ceremony (I realised this as I was running up to the track..) but I ended up biking at least 10k to get to the grocery store for next week’s food, so I think that squared away my exercise for the day. The track is closed today too, so I don’t know what I’m going to do for exercise … treadmill maybe?
This is what 12 days worth of eggs looks like, they’re going in my mini frittatas!
And because of my excruciatingly long art classes, I cooked up a week’s worth of food that can be eaten reheated or cold! I made mini egg frittatas (aka cupcakes!) with broccoli, mushrooms and goat cheese, sweet potato fries, and tofu fingers! All were delicious, and I can’t wait to eat the rest this coming week!
I also got a bag of shrimp, so tonight will be pasta with shrimp for dinner. Mmmmmm.
I think I’m getting sick. Greeeat. My dad woke up today sick and left me at work. Just as lunch was starting, I could feel the glands in my throat getting a little tender … now I’m sitting at my desk with a huge headache to go with the probably huge glands.
So I’m debating whether to run tonight or not … or just take a long bath and do my art history readings? We’ll see.

Lunch ended up being a fried egg man (with the help of a gingerbread man cookie cutter) with salsa on top, hahahaha. :) Afternoon snack was some almonds, and dinner was a fried egg sandwich with some Classico tomato sauce, mushrooms, and broccoli on top. Kinda weird, but yummy.
I finished my first 2k run for this week this afternoon, too which I think I paced a little too slow. But oh well, I’ll learn by Sunday.
Annnnnd now I’m sitting in a class called Intro to Media Computation until 10 pm. Time for a nap!
The End of Turkey Weekend aka: Days 6, 7, 8, after the fact.
Exercise-wise, I got nothing accomplished this weekend. Actually, that’s a lie, I did bike to my friend’s house rather fast, AND walked around the mall for a total of probably 4 hours over the course of Friday/Saturday. That counts, right?
Also, since it was a holiday weekend, I was a little slack with my diet restrictions. So I had a couple drinks Saturday night, and dessert Sunday at the family dinner.
Overall, I’d say, relaxation accomplished. :)
Today I’m back on the bandwagon though, stepping runs up to 2k this week and eating clean again.
Breakfast today was toast with almond butter (same old, same old… I love it too much), and morning snack is tofu cubes with salad dressing. In my mind, tofu is one of the most underrated foods I’ve ever eaten. So many people I know are grossed out by it, but I think it’s fantastic! It fills you up like meat and carbs, but without all the unwanted fat/gluten/nasty stuff, and I actually still love it plain. Tastes like eggy bread to me, aka FRENCH TOAST. And because it is a very plain taste, you can add any kind of flavour you want to it! Yummmm.
Also, weekend weigh-in: 123 lbs. Woo … although that was BEFORE Thanksgiving dinner so who knows if I’ve kept it down.
Dinner tonight: turkey sandwich with tomato and lettuce. :)
I stepped on the scale while waiting for the shower a few minutes ago and I’m down to 124 lbs since Monday .. cooooool. I’ve noticed in the past year that I can drop and gain weight REALLY fast, so I’m hoping it will become somewhat regular once I get settled into a good routine with the challenge.
As I was buried under piles of homework yesterday, I neglected to go workout, but I’m back today! This week I’m starting with 1k runs, and as I get further along I feel like I’m actually progressing. :) The bum ankle is lasting longer without pain, and I can breathe easier by the end of the run than even two days ago.
Food today has been stingy, the usual toast for breakfast (plain since I forgot my almond butter at work…), whole wheat crackers with tzatziki for morning snack AND lunch, since my snack of half a foot of cucumber apparently went bad; gross…
I’m heading home now to grab an afternoon snack and a nap!
So I came up with some new goals for myself to accomplish during the 8 Week Challenge. First off, get back into decent shape and be able to run 10k at a good pace! Second is to join speed skating again. I skated for 3 years and had to give it up because figure skating was getting too busy. Now I don’t figure skate anymore, so I’m gonna continue speed skating!
I just finished making rice pasta with a mushroom sauce, and really it is mushroom heaven. I would have taken a picture but I totally ate the majority of it as I pouring it into my bowl.
Here’s what I did: (this makes enough for 1 serving)
1 tsp EVOO
1/4 chopped onion
1 cup of chopped mushrooms
1 tsp thyme
salt and pepper to taste
1 tbsp butter if you prefer
First you heat the oil in a small saucepan over medium - high heat. Add the onions and saute them for about 2 minutes until they start to go see through and brown. Then add the mushrooms, thyme, salt and pepper, and saute it until your little heart desires! I melted the butter over the (leftover from last night) pasta about halfway before adding that to the saucepan, then mixed it all together and poured into my bowl.
It was super quick and easy, and sooooo yummy! Definitely doing this again when I’m low on tomato sauce.

I’m starting something called the 8 Week Eat Clean Challenge today! (Actually, yesterday, but I didn’t get round to posting)
Basically, you don’t eat sugar, caffeine, or processed foods and limit your red meat. Oh, and exercise!
SO, as of the first day I did half an hour of walking as my exercise, which is kind of lame considering I used to figure skate for minimum an hour and a half six days a week, but I’ll work back up to a decent gym schedule as the challenge progresses.
Breakfast was plain toast, snack was an assortment of veggies, I ran out of time for lunch but made up for it with some corn/flax chip things and then early dinner of rice pasta in tomato sauce with veggies and grilled chicken! Not a bad start.
Today breakfast was toast with almond butter, snack was corn chippy things again, and lunch was leftover pasta from last night. Afternoon snack is cucumbers and hummus and then I’m making a tuna sandwich with cucumbers and tzatziki for dinner!
2 days down, 54 to go.
I’m starting out the challenge at 126 lbs, and I’m hoping to regain some muscle that’s been lost in the past year, and generally be healthier.

Annnd hopefully I can make it to the track at school in time to run/jog for an hour. Which means I have to leave in half an hour. Shit!
